After searching 37 years for a tasty, high-quality guacamole to serve in his popular Dallas restaurant chains, our founder, Don Bowden, was left with only one choice—to make it himself.

It all started when this ambitious Texas restaurateur was researching different ways to keep his 100% natural guacamole, fresh and without preservatives. Don got wind of a promising new high-pressure technology. While the concept of pressurization technology had been around for years, no one was using it commercially. Don was a passionate man and a believer. Driven by gut instinct and passion for good guac, he dug deep into his pockets and pulled out some serious cash to build the machines.

So you see, just about the time Don should have been retiring, the old guy was tinkering with this new technology. Recipe in hand, chips in the other, Don was ready for testing. The world’s first commercial high-pressure preservation machines cranked out 7 lbs of guac at a time in 1996. (Now, we make it in 400 lb batches!) It was good, really good stuff that paid off in green—guac of course—and America’s #1 Guacamole was born. Around the world, Don is still recognized as a pioneer, an icon in the food service industry, and the “father” of high-pressure preservation. His vision brought the first machines to life. And as a true Texan, he can still boast the largest.

Twenty years later our 100% all natural guacamole remains America’s #1 brand. We run 24-7 to ensure that the green stuff arrives freshly made each week at your supermarket—like produce. Our factory is in Mexico. Don put it there because he believes that to make a better product, he needs to be where the avocados are grown and picked at the height of freshness.
